BREAD RECIPE
Hiker's Bread
Recipe contains

This bread is very dense,
very well-packed, very brick-like. It travels well, but take care with your
teeth while feasting.
Ingredients for Hiker's
Bread
- 1 Cup of Bread
Flour
- 1 Cup of Rye
Flour
- 1 ¼ Teaspoon of
Baking Powder
- 1 ¼ Teaspoon of
Baking Soda
- 1 Teaspoon of
Salt
- 1 ½ Cups Nonfat,
Sugar-free Yogurt
- 2 Tablespoons of
Light Colored Brown Sugar
- ¼ Cup of
Molasses
- ½ Cup of Dried
Apricots
- ½ Cup of Golden
Raisins
- ½ Cup of Dark
Raisins
- ½ Cup Dried
Cranberries
- 1 ½ Cup Dried
Oats
Preheat oven to 350 degrees
& spray a 9 by 5 loaf pan with non-stick cooking spray. Combine dry
ingredients. In separate bowl, combine yogurt, brown sugar, molasses &
oats untill thoroughly mixed. Fold in dried fruits.
Next, add flour mix &
combine. Dough will be very hard to stir & will resemble cookie dough
moreso than bread dough. Cover bowl with kitchen towel & allow dough to rest
for half an hour. It’s tired from all thy mixing, so give it a
break!
Pop into hot oven & bake
for about 45 minutes to one hour, or untill lightly browned. Do not overcook
or you'll need teeth of steel, or a trusty chain saw for
feasting.
Browned bread may be
brushed with egg wash so that it appears shiny. This bread goes well with hot
cocoa or peach flavored tea.
